Location: Hakuba, Japan Contract term : Seasonal, Part-time or Full-Time Period: from July, 2026 Work hours: Average of 40 hours per week THE ROLE OVERVIEW Join our kitchen team as a Line Chef/Chef de Partie and help deliver exceptional dining experiences in a fast-paced culinary environment. You'll work on food preparation, dish assembly, and maintaining our high standards while contributing to smooth service operations. With Michelin-starred aspirations, our team crafts beautifully composed menus that blend classical French technique with the seasonal rhythms of Shinshu β€” celebrating locally sourced ingredients, regional specialties, and the natural gifts of the surrounding landscape. We are excited to be welcoming a decorated Culinary Director with extensive global Michelin-starred experience to lead and inspire our kitchen team. COMMIS CHEF DUTIES Prepare ingredients and assemble dishes to recipe specifications Execute cooking techniques (grilling, sautΓ©ing, frying) with precision Ensure timely service during peak hours while maintaining quality standards Follow order details, special requests, and dietary restrictions Keep workstation clean, organized, and properly stocked Communicate effectively with kitchen team and support coordinated operations WHAT YOU NEED Previous experience as a commis chef / line chef Legal right to live and work in Japan (typically via a Working Holiday Visa ) Excellent interpersonal and communication skills Willingness to work flexible hours, evenings, mornings, weekends, and holidays, as per the requirements of the establishment Ability to handle a fast-paced and dynamic work environment and to stand for long periods, lift heavy objects (such as kegs or cases of beverages), and handle the physical demands of the job Strong work ethic and a team first mentality English fluency; Japanese a bonus Japanese driving license or International Driving Permit preferred WHAT WE WOULD LIKE YOU TO BE LIKE You are reliable, respectful, and professional in attitude and appearance You enjoy working in a team and adapt easily to new environments You are solution-focused and calm under pressure You love nature, snow, and creating great guest experiences WHAT WE CAN DO FOR YOU Competitive hourly rate Subsidized shared accommodation Discounts at all HHG restaurants and bars A variety of shift patterns to allow for plenty of time on the mountain The opportunity to live and work and play in one of the world's snowiest ski resorts Social events and team activities Potential for longer-term or returning opportunities Visa sponsorship opportunities available to candidates who meet eligibility requirements COMMIS CHEF SHIFTS Commis Chefs are expected to work at least 40 hours per week in flexible shifts that can cover breakfast, lunch or dinner. Most kitchens operate between 7am and 10pm. ACCOMMODATION HHG provides staff accommodation in central Hakuba (mainly in Happo Village, Wadano, and Kamishiro). Options include shared, dormitory, or private rooms depending on your role.
